Lee's Instant Pot Rasta Pasta
Ingredients
  • 1 tablespoon vegetable oil 1 tbsp for sauteeing chicken or shrimp
  • 2 chicken breasts about 1 lbs (450 grams) - cut into strips, I used shrimp
  • 3 tablespoons jerk seasoning 1.5 tbsp to season the raw chicken, and 1.5 tbsp to season after pressure cooking
  • I used Harissa Maghrebi and garam marsala sprinkled on shrimp.
  • 2 cloves real garlic minced or grated
  • 2 cups (500 ml) vegetable stock
  • 1 tsp salt
  • 4 cups (400 grams) dried penne pasta
  • ½ cup (120 ml) heavy cream or double cream (I used ½ ltr of half and half)
  • ½ cup (80 grams) parmesan cheese grated
  • 3 bell peppers preferably in different colors - sliced
  • ½ cup green onions sliced, I used cooking onions and sauteed after shrimp
  • 10 jumbo shrimps optional - if using* see notes
