* 1 red onion, finely sliced
* 2 limes, juiced
* 2 servings of rice (about 50g / 2 oz per person)
* 200g mushrooms, finely sliced
* 1 tablespoon olive oil
* ½ teaspoon brown rice miso paste
* 100g frozen edamame
* 6 spring onions, finely chopped
* 2 tablespoons sesame seeds
* 1 red chilli, finely sliced
* pinch of sea salt
Ingredients
  • 200g mushrooms, sliced
  • 1 tablespoon toasted sesame oil + extra for the pan
  • 1 tablespoon olive oil
  • 1 tablespoon tamari
  • 1 tablespoon brown rice miso paste (or white miso paste)
  • 1 tablespoon maple syrup
  • 1 tablespoon mirin (or use 1 tablespoon rice wine vinegar + ½ teaspoon maple syrup)
  • 1 tablespoon of sesame seeds
  • 2 red chillies, deseeded and sliced
  • pinch of sea salt
