Spinach, Zucchini & Bacon Muffins

2 large zucchinis, grated

1 large handful spinach, chopped

1 small onion, finely chopped

2 to 3 rashes bacon, finely chopped

3 eggs

⅓ cup organic extra virgin olive oil, avocado or coconut oil (I use olive)

½ cup cheese (this can easily be substituted or left out, sometimes I use fetta and sometimes I don’t use any cheese at all)

½ cup coconut flour

1 ½ tsp baking powder

Salt and pepper to taste
