Kombu Tsukudani (Simmered Kombu) 昆布の佃煮
Ingredients
  • 2 oz used kombu (kelp) (55 g, I used Hidaka Kombu from making dashi; See Notes)
  • ½ tsp sesame seeds
  • subheading: Seasonings:
  • 1 cup water
  • 1 Tbsp sake
  • 1 Tbsp mirin
  • 1 tsp rice vinegar
  • 2 Tbsp soy sauce
  • 1 tsp sugar (add more if you prefer the sweet taste)
  • ½ tsp katsuobushi (dried bonito flakes)
  • 1 dried red chili pepper
