Lion King: Rafiki’s Coconut Fruit Kabobs

Ingredients
  • 8-ounce can pineapple chunks, packed in juice
  • 1 medium banana, peeled
  • 1 medium apple
  • ¼ cup orange juice
  • ¼ cup shredded coconut
Steps
  1. 1. Open the can of pineapple chunks. Pour the pineapple chunks and juice into a medium bowl.
  2. 2. Slice the banana into 1-inch pieces. Add to the bowl.
  3. 3. Use apple corer to remove the core from the apple. Cut the apple into 1-inch cubes. Add to the bowl.
  4. 4. Pour the orange juice over the fruit and stir to blend.
  5. 5. Put the fruit on a skewer, alternating the chunks of pineapple, banana and apple. Fill each skewer with an equal amount of fruit.
  6. 6. Pour half the coconut onto a plate. Place the skewers on top. Sprinkle remaining coconut over the fruit. Gently press the coconut to coat the fruit on all sides.
Notes
  • Minnie Minder:
  • You can cover these kabobs with plastic wrap and put them in the refrigerator.
  • Then your snack is ready when you are.
  • Eat these kabobs within 24 hours.
