Roasted Chicken with Vegetables
Ingredients
  • 1 onion, cut into 8 wedges
  • 1 fennel bulb, trimmed, halved and cut into ½ inch slices
  • 1 yellow pepper, cut into ½ inch thick strips
  • 1 rutabaga, peeled, halved and cut into ½ inch slices
  • 1 chicken, cut into 8 pieces
  • 2 Tbsp. seasoning mix (see below)
  • 2 Tbsp. olive oil
  • 1 lemon, cut into ¼ inch slices
  • 6 cloves garlic, peeled and thinly sliced
  • ½ cup black olives (packed in water)
  • 1 bunch fresh thyme sprigs
  • 1 cup homemade broth, chicken or vegetable
  • subheading: SEASONING MIX:
  • 1 Tbsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 ½ tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. dried rosemary
  • 1 tsp. dried oregano
  • ½ tsp. cayenne
