Tuscan Chicken Tortellini Soup (Crock-Pot or Stove-Top) with Weight Watchers Points
Ingredients
  • 1 cup onions, diced
  • 1 tablespoon olive oil
  • 1 tablespoon garlic, minced
  • 4 cups reduced-sodium chicken broth, I like Swanson’s
  • 1 (28 oz) can diced tomatoes, drained
  • 1 (15 oz) can white beans rinsed and drained
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 1 (9 to 10 oz) package refrigerated cheese tortellini, I used Trader Joe’s,
  • 2 cups cooked chicken, diced,
  • 2 cups fresh spinach leaves, packed
  • 1 cup reduced-fat milk
  • Grated parmesan cheese for topping (optional)
