Ingredients
- 2 large very ripe bananas
- ⅔ cup quick-cooking oats (uncooked) (6 fp)
- ½ teaspoon baking powder
- Pinch of kosher salt
- ½ cup unsweetened almond milk (0 fp)
- 5 tablespoons peanut butter powder (such as PB2) (3 fp)
- 1 tablespoon coconut sugar* (3 fp)
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup blueberries
- 4 tablespoons sugar free preserves*, all fruit like Polaner (1 fp)
Steps
- Generously spray a 7-inch round cake pan with cooking spray.
- In a medium bowl, mash the bananas well with a fork. In another medium bowl, stir together the oats, baking powder, and salt.
- In a large bowl, whisk together the milk, peanut butter powder, honey, egg, and vanilla. Mix in the bananas until well incorporated, then add the oat mixture and combine. Fold in the blueberries. Pour into the prepared baking dish and spoon the jelly over the top by the teaspoon.
- Preheat the air fryer to 300 F. (Regular oven heat to 350 F)
- Place the baking dish in the air fryer basket. Bake for 25 minutes, or until the top is golden brown and the oatmeal is set in the center. (Regular oven bake at 350 F for 40 minutes or until oatmeal is brown and set in the center).
- Remove and set aside to cool for 10 to 15 minutes. Slice into 4 wedges and serve warm.

- 11 to 20-19 Made as per recipe except subbed coconut sugar for the honey.
