Ingredients
  • 2 medium eggplants (about 2 pounds total)
  • 1 cup almond flour
  • 1 cup grated Parmesan cheese, divided
  • 1 Tbsp Italian seasoning
  • 1 tsp garlic powder
  • 2 large eggs, room temperature
  • sea salt and ground black pepper, to taste
  • avocado or olive oil cooking spray
  • 4 cups marinara or pizza sauce, divided
  • 1 cup shredded mozzarella cheese, divided
  • a handful of fresh basil leaves, minced
