Japanese-Style Curry
Sonoko Sakai, a Los Angeles-based cooking instructor and author of “Japanese Home Cooking,” blends her own curry powder, which she uses to create all-natural, additive-free homemade curry bricks. This recipe simplifies her curry powder and skipped the brick-making process in favor of using a roux for thickening.
Ingredients
  • 1 small (1-inch diameter) dried shiitake mushroom (stemmed and broken in small pieces)
  • 1½ teaspoons brown or black mustard seeds
  • 1½ teaspoons coriander seeds
  • 1½ teaspoons fennel seeds
  • 1½ teaspoons cumin seeds
  • 1½ teaspoons ground ginger
  • 1 teaspoon ground turmeric
  • ½ teaspoon sweet paprika
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground cinnamon
