TOM SAAP NUA (THAI HOT AND SOUR BRAISED BEEF SOUP)
Ingredients
  • 500g sirloin steak, cut into well pieces
  • 200g straw mushrooms, sliced (optional oyster mushroom, or button mushrooms)
  • 2.5 liters water
  • 1 beef bouillon cube
  • ½ tbsp canola or vegetable oil
  • 3 lemongrass stalks, peel a few of tough outer layers, lightly crushed and cut the bottom portion of the lemongrass stalk into 3 short pieces
  • 3 Tbsp galangal, sliced
  • 6 kaffir lime leaves, each shredded
  • ½ Tsp salt
  • 3 Tbsp fish sauce
  • 4 Tbsp lime juice
  • 4 cloves shallots, lightly crushed
  • 3 each coriander roots, lightly crushed (optional coriander stalks, lightly crushed and chopped)
  • 3 fried dried red chilies, roughly chopped
  • 4 plum tomatoes, divide into wedges
  • 3 cloves garlic, lightly crushed
  • 2 green onion stalks, chopped
  • 2 culantro stalks, cut into 4 short pieces, for soup
  • 2 culantro stalks, finely chopped, for garnish
  • coriander leaves for garnish
  • 10 bird chilies, lightly crushed
  • Dash of salt
