Roasted Beet, Walnut, Goat Cheese and Honey Balsamic Salad
Ingredients
  • subheading: Salad:
  • 3 bunches small to medium beets (8 to 10 beets), tops trimmed and scrubbed (I used the 4 beets that came in my CSA share)
  • 3 T olive oil
  • ½ small red onion, thinly sliced
  • baby salad greens such as spinach, mixed greens, or arugula (I used arugula)
  • ½ cup coarsely chopped walnuts, toasted
  • ½ cup crumbled goat cheese
  •  
  • subheading: Honey Balsamic Dressing:
  • ¼ c balsamic vinegar
  • ¼ c canola oil
  • ¼ c extra-virgin olive oil
  • 2 T honey - or to taste
  • 1 T Dijon mustard
  • 1 clove garlic, minced
  • salt and freshly ground black pepper to taste
