Peanut butter cottage cheese ice cream? Yes! It is low in calories, high in protein, and best of all it is a delicious soft-serve ice cream. No ice cream maker is needed, since it is made in a powerful blender.
Ingredients
  • 1 (24 ounce) container full-fat cottage cheese
  • ½ cup peanut butter
  • ⅓ cup pure maple syrup
  • 2 tablespoons peanut butter powder
  • 1 tablespoon sugar-free peanut butter syrup, such as Torani®
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
