Stuffed Pepper Soup
Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 pound lean ground beef
  • 1 pound Italian sausage (mild or spicy)
  • 1 small sweet onion (diced)
  • 1 small red bell pepper (ribs and seeds discarded, diced)
  • 1 small green bell pepper (ribs and seeds discarded, diced)
  • 2 cloves garlic (minced)
  • salt and pepper (to taste)
  • 15 ounces petite diced tomatoes (undrained)
  • 10 ounces Rotel (undrained - choose from original, hot or mild)
  • 4 cups low-sodium beef broth
  • 2 cups water
  • ¼ cup brown sugar (packed)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon taco seasoning
  • 1 teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • 2 cups long grain rice (cooked)
  • fresh chopped parsley (for serving)
