Yellow Split Pea & Butternut Soup
Ingredients

  • 3 cups dried/uncooked yellow split peas, rinsed
  • 6 cups butternut squash, peeled and cut into ¾-inch cubes
  • 1 medium chopped yellow or white onion (about 2 cups)
  • 1 cup water
  • 2 ribs celery, chopped (about ½ cup)
  • 1½ tablespoons dried Italian herb seasoning
  • 1½ teaspoons paprika
  • 1¼ teaspoons granulated garlic
  • 1 teaspoon ground coriander
  • ½ to 1 teaspoon red pepper flakes (optional; these are spicy)
