Ingredients
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 cup diced onion
  • 1 andouille sausage, halved lengthwise and cut into ¼-inch half-moons
  • 2 tbsp finely chopped garlic
  • 1 can (14 oz) diced tomatoes
  • 1 small can (4 oz) diced green chiles
  • 1 green bell pepper, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 2 large zucchini, diced
  • 2 tablespoons Cajun seasoning
  • 1 tbsp Louisianna hot sauce (or more to taste)
  • 1 cup chicken broth
  • 1 lb chicken, cooked, cooled, and chopped
  • 1 lb cooked, peeled, and deveined shrimp
  • ½ tsp Xanthan gum (optional)
