Bread (Caraway Rye Bread)
Ingredients
  • 1 cup (250 ml) (245gr) lukewarm water

  • 1 tsp sugar
  • 1 tsp honey
  • 1 tsp molasses
  •  
  • 1 ½ teaspoons salt
  •  
  • ½ cup (113 gr) sour cream (low-fat is fine; please don't use nonfat)
  •  
  • 1 cup (106 gr) white rye, medium rye, or pumpernickel flour
  • 1 cup (106 gr) barley flour
  • 1 ⅓ cups (170 gr) Unbleached All-Purpose Flour
  •  
  • 2 ¼ teaspoons instant yeast
  •  
  • 1 to 2 tablespoons caraway seeds, to taste
  •  
  • 3 tablespoons vital wheat gluten or King Arthur Rye Bread Improver, optional, for best rise (didn't have, should buy)
