Baked Chicken and Artichoke Hearts
Ingredients
  • 4 boneless, skinless chicken breasts trimmed of fat
  • 16 oz. package frozen artichoke hearts (or 1 15-oz. can)
  • 2 to 3 shallots thinly sliced
  • 2 to 3 cloves garlic minced
  • ⅔ cup white wine can substitute chicken broth
  • 3 tbs. unsalted butter or ghee
  • 1 lemon sliced, seeds removed
  • 2 ½ Tablespoons olive oil
  • salt + pepper
  • chopped parsley
