Ingredients
- 3lb pork loin
- 1 Tbsp salt
- 1½ Tbsp sugar
- 2 tsp chili powder
- 2 tsp cocoa powder
- 2 tsp instant espresso powder
- 1 tsp black pepper
- 2 carrots
- 1 onion
- 2 stalks celery
- 2 white onions
- 8 oz cremini mushrooms
- 2 Tbsp butter
- 3 tsp rub
- 3 cups pork stockz
- Swiss cheese
- French rolls
- ½ cup half and half
Steps
- Mix spices, rub 3 Tbsp of rub on loin
- Dice carrots onion celery lay in cast place roast on top 400⁰ for 50 min IT. OF 145⁰
- Heat butter add onions and mushrooms sautee till translucent add 1tsp rub sautee 20 min until dark carmelized
- Heat vegetables from roasting add stock and 2 tsp rub reduce for 5 min.
- Strain and add half and half off heat, than keep warm.
- Broil bread and cheese
- Add meat and onions
