Skillet Chicken & yellow Rice
Ingredients
  • 2 lbs Chicken thighs
  • Grill Matees Montreal Seasoning
  • Paprika
  • Salt & pepper
  • Oil, for frying
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 large bag Mahatma Yellow Rice
  • 3 cups chicken broth
  • Juice of ½ a lemon
Steps
  1. Season chicken with all seasonings, generously or to taste, on both sides
  2. Heat oil in pan. When hot add chicken, skin side down.
  3. Fry for 4 minutes then flip and cook for 4 more minutes.
  4. Remove chicken from pan and add chopped onion and garlic.
  5. Saute and loosen the browned bits from the bottom of the pan.
  6. Add thge bag of yellow rice, chicken broth and stir well.
  7. Add chicken back to pan.
  8. Bring to a boil and add lemon juice.
  9. Reduce heat to low, cover and simmer for 25 minutes.
