Moroccan Red Lentil Soup
Ingredients

  • -1 Cup red lentils (Masoor dal)/Brown/Green lentils
  • -1 Tbsp vegetable oil/Olive oil
  • -1 Medium sized chopped onion
  • -1 Tsp minced garlic
  • -1 Chopped Carrot
  • -1 Chopped sweet potato
  • -1 Chopped white potato
  • -½ Tsp turmeric powder
  • -Salt as per taste
  • -1 Tsp cumin powder
  • -1 Tsp ginger powder/Ginger paste
  • -½ Tsp black pepper
  • -½ Tsp red chili powder
  • -½ Cup tomato puree
  • -3 Cups of vegetable broth
  • -2 Cups of water
  • -1 Bay leaf
  • -2 Cups of chopped spinach (Optional)
Steps
  1. Rinse a cup of red lentils and set aside.
  2. Saute onion & garlic in broth or oil, and when softened, add chopped carrot and chopped/cubed potatoes.
  3. Add Spices and tomato puree. Add broth & water and bay leaf, and bring to a low boil. Reduce heat to a simmer, and cover and cook 30 min. After 30 min, add chopped spinach, and simmer 5 min more.
