Quinoa Stuffed Peppers
Ingredients
  • ⅔ cup quinoa, rinsed and drained (before I found this stuff at Trader Joe's we used cous cous which worked well, this was our first time making it with quinoa)
  • 6 red bell peppers (We used green and only 4 of them, same amount of inside stuff this time around, I think in the past we have reduced it a little)
  • 1 tablespoon olive oil
  • ¾ cup diced carrots
  • ½ red onion, diced
  • 1 10-ounce package frozen spinach, thawed and drained
  • 1 15-ounce can red kidney beans, rinsed and drained
  • 1 teaspoon chili powder
  • ½ cup grated part-skim mozzarella
