Ingredients
- subheading: For each 1 to 1-½ pounds of meat, dissolve:
- ¼ cup kosher salt (or 2 tablespoons table salt)
- 2 tablespoons sugar
- in 4 cups cold tap water
- add other spices/aromatics for flavor as desired
Steps
- Submerge meat in brine.
- Refrigerate 45-ish minutes, until fully seasoned.
- Remove meat from brine, rinse under running water.
- Dry thoroughly with paper towels.
- Then season as desired, refrigerate for 8 hours, and grill or cook as desired. Alternately, cook immediately. Either way works great.
