Ingredients
  • subheading: For each 1 to 1-½ pounds of meat, dissolve:
  • ¼ cup kosher salt (or 2 tablespoons table salt)
  • 2 tablespoons sugar
  • in 4 cups cold tap water
  •  
  • add other spices/aromatics for flavor as desired
Steps
  1. Submerge meat in brine.
  2. Refrigerate 45-ish minutes, until fully seasoned.
  3. Remove meat from brine, rinse under running water.
  4. Dry thoroughly with paper towels.
  5. Then season as desired, refrigerate for 8 hours, and grill or cook as desired.  Alternately, cook immediately.  Either way works great.
