Ingredients
  • 1 1-inch piece ginger, grated
  • 1 clove garlic, minced
  • 1 medium carrot, ribboned
  • 1 medium yellow bell pepper, chopped
  • 4 oz rice noodles

  • 2 tbsp tamari
  • 3 tbsp rice vinegar
  • 2 tsp maple syrup
  • ½ lime, juice of
  • 1 tbsp water
  • 1 tsp cornflour, (cornstarch)
  • subheading: To serve:
  • 1 red chilli, sliced
  • ¼ cup peanuts, chopped
  • coriander
  • black pepper
  • ¼ cup green peas, optional
