Gluten-free Focaccia (Adapted from "1,000 Gluten-free Recipes" by Carol Fenster)
Ingredients
  • 1 ½ tsp. active dry yeast
  • 2 tsp. sugar
  • ½ cup warm water (110 F)
  • White rice flour for dusting the pan
  • ½ cup sorghum flour
  • ½ cup tapioca starch
  • ½ cup potato starch
  • 1 ½ tsp. xanthan gum
  • ½ tsp. salt
  • 2 large eggs, best at room temperature
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. cider vinegar
  • subheading: For herbed focaccia, add:
  • 1 tsp. dried thyme
  • ½ tsp. onion powder
