Onion and Cheddar Mashed Potato Cakes

  • 2 cups leftover mashed potatoes, chilled
  • ½ cup sharp cheddar cheese, shredded
  • ¼ cup green onions, finely chopped
  • 1 egg, beaten
  • ½ cup all-purpose flour, for coating
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil, for frying

  • In a large bowl, combine mashed potatoes, cheddar cheese, green onions, and the beaten egg. Season with garlic powder, salt, and pepper. Mix well until all ingredients are fully incorporated.
  • Form the mixture into patties, about ½ inch thick.
  • Place the flour in a shallow dish. Lightly coat each patty with flour on both sides.
  • Heat olive oil in a large skillet over medium heat. Once hot, add the patties and cook for 4 to 5 minutes on each side, or until golden brown and crispy.
  • Transfer the potato cakes to a paper towel-lined plate to drain any excess oil.
  • Serve warm, optionally with sour cream or your favorite dipping sauce.
