Carrot Soup with Turkey Meat balls

Ingredients
- 2 lbs carrots, or ½ parsnips
- 2 Tbsp olive oil
- 1 large onion chopped
- 4 cloves garlic minced
- 4 C chicken or veg broth
- 2 C spinach leaves
- subheading: Meatballs:
- 1 lb ground turkey
- ½ c pecorino-Romano cheese or parmasean
- ½ c Italian bread crumbs
- 1 clove garlic minced
- 4 TBsp milk
- Salt and pepper as desired. Cheese is salty though.
Steps
- Saute vegetables in oil about 15 min.
- Stir in broth, simmer 30 min. Cool 15 min. Purée in food processor.
- Return to pot, add meat balls, heat through.
- Add spinach cook until wilted.
- Meat balls: mix all ingredients well. Form into 1 inch balls. Bake @350 20 min. These freeze well.
Notes
- I use 1#3 to 4 oz of turkey with same ingredients.
