Carrot Soup with Turkey Meat balls

Ingredients
  • 2 lbs carrots, or ½ parsnips
  • 2 Tbsp olive oil
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 4 C chicken or veg broth
  • 2 C spinach leaves
  •  
  • subheading: Meatballs:
  • 1 lb ground turkey
  • ½ c pecorino-Romano cheese or parmasean
  • ½ c Italian bread crumbs
  • 1 clove garlic minced
  • 4 TBsp milk
  • Salt and pepper as desired. Cheese is salty though.
Steps
  1. Saute vegetables in oil about 15 min.
  2. Stir in broth, simmer 30 min. Cool 15 min. Purée in food processor.
  3. Return to pot, add meat balls, heat through.
  4. Add spinach cook until wilted.
  5. Meat balls: mix all ingredients well. Form into 1 inch balls. Bake @350 20 min. These freeze well.
Notes
  • I use 1#3 to 4 oz of turkey with same ingredients.
