High Protein Creamy Tomato Soup
Ingredients

  • 1 large or 2 small shallots, peeled and quartered

  • 1 + ½ tsp salt + additional to taste
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes
  • 1 tbsp balsamic vinegar
  • 1 + ½ cup cottage cheese
  • ½ cup chicken bone broth
  • fresh chopped basil leaves, for garnish
