Amy's hippie coconut rice and beans

Ingredients
  • 1 Tbls olive oil
  • 1Tbls garlic
  • ¼ white wine
  • ½ tsp red chili flakes
  • 1 cup basmati rice
  • 1 cup chicken stock
  • ¾ cup light coconut milk
  • 1 can black beans
  • 2 Tbls cilantro
  • Salt and pepper
Steps
  1. Heat oil, minced garlic and chili flakes sauté until soft
  2. Add rice and stir to coat
  3. Add white wine and stir
  4. Add chicken stock and coconut milk
  5. Stir rice well and bring to boil
  6. Lower heat to simmer for 20 minutes until liquid has evaporated
  7. Stir in beans and cilantro
  8. Season with salt and pepper
