Chestnut Pate De Vegan 'Foie Gras'
Ingredients

  • 1 large onion, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 225ml vegetable stock
  • 180g pouch Merchant Gourmet Simply Roasted Chestnuts
  • 2 tbsp Brandy
  • 2 tbsp walnut oil
  • Salt
  • Baguette or Sourdough bread for toast (Optional)

  • 1 small carrot, cut into ribbons
  • 1 small courgette, cut into ribbons with a vegetable peeler
  • 2 shallots, peeled and finely sliced
  • 1 small apple, halved and finely sliced
  • 10g flat leaf parsley leaves
  • 1 tsp salt
  • 3 tbsp cider vinegar
  • 3 tsp sugar
