Roasted root vegetables

Ingredients
  • 3 large carrots
  •  
  • 1large beet
  •  
  • 1 small onion
  •  
  • 1 large sweet potato
  •  
  • 4 small potatoes
  •  
  • 3 to 4 TBLspoons olive oil
  •  
  • Coarse Kosher salt
Steps
  1. Peel all vegetables.  . Cut into bite size pieces. Not too small or they will burn. Coat with oil. Place all on a cookie sheet with sides, covered with either parchment paper or foil. Sprinkle with Kosher salt. Roast for 40 min  on 400 degrees. Cook until white potatoes are done about 40 min.
