- Mashed Rutabega
- This is a great recipe to replace mashed potatoes. If you are counting your carbs it is a great alternative.
- 1 (1 ½ lb) rutabagas
- ⅓ cup sour cream
- ½ tsp salt
- ½ tsp garlic powder
- ¼ cup butter
- ⅛ tsp pepper
- 1. 1. Peel rutabega with vegetable peeler and cut into small cubes, about ½" or smaller.
- 2. 2. Boil rutabega cubes for approximately 15 to 20 minutes. The time may vary based on size of pieces. They are done when easily poked with a fork.
- 3. 3. Drain rutabega and mash with potato masher with all other ingredients. A food processor works great if you have one.
