Ingredients
  • Mashed Rutabega

  • This is a great recipe to replace mashed potatoes. If you are counting your carbs it is a great alternative.

  • 1 (1 ½ lb) rutabagas
  • ⅓ cup sour cream
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ cup butter
  • ⅛ tsp pepper
  •  
  • 1. 1. Peel rutabega with vegetable peeler and cut into small cubes, about ½" or smaller.
  •  
  • 2. 2. Boil rutabega cubes for approximately 15 to 20 minutes. The time may vary based on size of pieces. They are done when easily poked with a fork.

  • 3. 3. Drain rutabega and mash with potato masher with all other ingredients. A food processor works great if you have one.
