Mexican Red Rice (Arroz Rojo)

Ingredients
  • 1 tablespoon vegetable oil
  • 1 cup long grain white rice (well rinsed)
  • ⅓ cup finely chopped white onion
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • 1 cup bottled salsa, blended
  • ½ teaspoon kosher salt
  • 1 serrano chile (optional)
  • 1 fresh cilantro sprig
