Barbacoa Gammon with Black Bean & Mango Salsa
Ingredients
  • No.1 Unsmoked Gammon Joint (about 1.4kg)
  • 2 bay leaves
  • 6 black peppercorns
  • 5 clove/s garlic, whole
  • 1 onion, quartered
  • 1 carrot, cut into large chunks
  • 1 stick celery, cut into large chunks
  • subheading: For the glaze:
  • 2 tbsp Cooks’ Ingredients Barbacoa Seasoning
  • 3 tbsp light brown soft sugar
  • ½ unwaxed lime, zest and juice
  • ¼ x 25 g pack coriander, stalks finely chopped
  • subheading: For the salsa:
  • ½ red onion, finely chopped
  • 1 large ripe mango, flesh cubed
  • 400 g can black beans, drained and rinsed
  • 2 tbsp olive oil
  • 1 unwaxed lime, zest and juice
  • 1 red chilli, deseeded and chopped
  • ½ x 25 g pack coriander, leaves and stalks finely chopped
