Indian Spiced Frittata with Tomato & Onion Chutney

  • 1 teaspoon turmeric powder
  • ¾ cup vegetable stock
  • ¾ cup coconut yoghurt

  • 3 red onions, sliced thinly
  • 2 tablespoons vegetable oil
  • 1 tablespoon black mustard seeds
  • Thumb ginger, grated
  • 2 cloves of garlic, grated
  • 4 ripe red tomatoes, chopped roughly
  • 100 ml water
  • 2 tablespoons white wine vinegar
  • 1 teaspoon brown sugar
  • Salt and pepper
