Saucy Peanut Chicken with Broccoli and Peppers
Ingredients
  • 4 chicken breasts (cubed)
  • 2 tablespoons soy sauce
  • 2 tablespoons coconut oil
  • 2 bell peppers (cut into strips)
  • 1 head broccoli (cut into florets)
  • Chopped peanuts and sesame seeds (to serve)

  • ½ cup all-natural peanut butter
  • ¼ cup low-sodium soy sauce (gluten-free, if needed)
  • ¼ cup fresh lime juice (from 1 ½ limes)
  • 2 tablespoons red curry paste
  • 2 tablespoons rice wine vinegar
  • 2 cloves garlic (very finely minced)
  • 1 inch piece of ginger (very finely minced)
  • ¾ cup water
