Protein-Packed Vegan Stir-Fry
Ingredients
  • 1 block organic tempeh (ex: Trader Joe’s or Lightlife brand)
  • ½ cup shredded carrots (or two large carrots, diced)
  • ½ a bell pepper, diced
  • ½ cup asparagus, chopped
  • 1 cup edamame (can use fresh or frozen)
  • 1 cup red cabbage, chopped
  • 1 cup bok choy, chopped
  • 1 tablespoon avocado oil
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons Tamari (could use coconut aminos or reduced-sodium soy sauce)
  • 3 cloves minced garlic
  • pinch of salt (add more to taste)
  • pinch of red pepper flakes (add more to taste)
  • 3 cups cooked rice (can use brown, black, or white)
