Dan Dan Sauce (FB Paul Mak recipe)
Spicy Dandan style meat sauce over rice. You can pretty much substitute some of ingredients for your taste. I often use chili bean paste, peanut butter, sesame paste (or sesame seeds and oil), hoisin sauce. These are probably the he most important. For the pickled mustard, maybe just add more onions.
Ingredients
  • subheading: For the Meat and Pickled Mustard Green:
  • 3 teaspoons oil
  • 8 oz. ground pork
  • 2 teaspoons sweet bean sauce or hoisin sauce
  • 2 teaspoons Shaoxing wine
  • 1 teaspoon dark soy sauce
  • ½ teaspoon five spice powder
  • ⅓ cup pickled mustard green
  •  
  • subheading: For the sauce:
  • 2 tablespoons sesame paste
  • 3 tablespoons soy sauce
  • 2 teaspoons sugar
  • ¼ teaspoon five spice powder
  • ½ teaspoon Sichuan peppercorn powder
  • ½ cup of your prepared chili oil
  • 2 cloves garlic, finely minced
