Gluten Free Carrot Cake Donuts (Vegan)
Ingredients

  • 1 cup fine sorghum flour OR fine brown rice flour
  • ¼ cup ground golden flaxseed (also called golden flaxmeal)
  • 1 ½ teaspoon baking powder
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ⅛ teaspoon nutmeg
  • ¾ cup rice milk or oat milk
  • ½ cup fine shredded carrots (about 1 medium/large carrot)
  • ½ cup + 3 Tablespoons packed brown sugar
  • ¼ cup light tasting olive oil (or other mild tasting oil)
  • 2 teaspoons vanilla extract
  • subheading: Dairy Free Cream Cheese Glaze:
  • ¼ cup + 1 Tablespoon dairy free and soy free cream cheese (I used Daiya)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 to 3 Tablespoons rice milk or oat milk
