Ravioli & Broccoletti

Ingredients
  • 25 ounce package frozen cheese ravioli, uncooked
  • ½ cup butter
  • 2 Tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • 2 pounds broccoletti, trimmed and stems removed
  • ¼ teaspoon salt
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon lemon zest
  • Garnish: Parmesan cheese
Steps
  1. Cook ravioli according to package instructions.
  2. Drain, reserving one cup of cooking water.
  3. Meanwhile, melt butter with olive oil in a large skillet over medium-high heat.
  4. Add garlic and sauté until golden, about 3 minutes.
  5. Add broccoletti, seasonings and reserved cooking water to skillet; bring to boil.
  6. Cover and cook about 5 minutes, or until liquid evaporates and broccoletti is tender.
  7. Stir in lemon zest.
  8. Add ravioli to skillet; stir gently to coat well with butter mixture.
  9. Sprinkle with Parmesan cheese before serving.
