Ingredients
  • Soft-baked, tender, moist, and flavorful, these cake-like cookies are made with two veggies!

  • 1 (11.5 oz) Simple Mills Naturally Gluten Free Vanilla Cake Mix (1440 cal, 96g sugars*, 24g protein)
  • 1 tsp freshly grated ginger or dash ground ginger (2 cal)
  • 1 C loosely packed finely shredded carrots (40 cal, 1g protein)
  • 1 tsp cinnamon (7 cal)
  • ⅛ tsp nutmeg (1 cal)
  • ½ C (132g; 4.73 oz) zucchini puree (30 cal, 4g protein)
  • 1 egg, lightly beaten (70 cal, 6g protein)
  • 1 tsp vanilla (13 cal)
