Old Fashioned Banana Cake with Caramel Icing
This was my great grandmothers recipe

  1. 2 large or 3 small overripe bananas - mash with a fork and measure put a heaping cup and set aside.
  2. sift together and set aside 2 cups of flour, ½ teaspoon baking powder, ¾ teaspoon baking soda and ½ teaspoon of salt
  3. in a large bowl put ½ cup of shortening, 1 teaspoon of vanilla, 1 ½ cups of sugar, and 2 eggs. Beat with mixer about 1 ½ minutes scraping often.
  4. add ¼ cup of buttermilk and mix in well.
  5. add sifted flour mixture alternately with the mashed bananas scraping bowl often and beat only enough to blend. about 3 minutes.
  6. pour batter into 2 greased and floured round cake pans and bake in a preheated oven at 350° for 30 to 35 minutes.
  7. when cooled make the icing
  8. ICING....melt ½ cup of butter add 1cup of brown sugar...in a sauce pan bring mixture to a boil for 1 minute stirring constantly until slightly thick.
  9. cool slightly and add ½ cup of milk and beat with mixture until smooth and then beat in 3 ½ cups of powdered sugar until of spreading consistency. ice cake and enjoy!
