- Diced red onion (¼ cup max)
- Steamed broccoli florets
- Shredded sauteed cabbage
- Roasted, chopped peppers (bell or poblano)
- Pitted, slivered black olives
- Diced, sauteed zucchini
- Fresh or thawed frozen corn kernels
