Chicken Pita Nachos
Ingredients
  • ½ lb boneless, skinless chicken breasts
  • ¼ tsp salt, ¼ tsp pepper
  • 1 (9-oz) bag baked whole-wheat pita chips
  • 1 (7-oz) container classic hummus
  • 1 cup shredded romaine lettuce (or any kind of lettuce)
  • 1 tomato, chopped
  • ¼ cup sliced pitted kalamata olives
  • ¼ cup crumbled feta cheese
  • 1½ Tbsp olive oil
  • 1½ tsp red wine vinegar
  • ½ tsp dried oregano (or 1½ tsp fresh)
