Gluten Free Tempura グルテンフリーの天ぷら
Ingredients
  • subheading: For Tempura:
  • 1 Japanese sweet potato (Satsumaimo)
  • ⅛ kabocha squash/pumpkin
  • 8 okras
  • Handful French green beans (haricots verts)
  • 8 to 10 large or jumbo shrimps
  • 2 Japanese/Chinese eggplant
  • 4 cups neutral flavor oil (vegetable, canola, etc) (4 cups = 960 ml)
  • 2 inches daikon radish (2" = 5 cm)
  • subheading: For Tempura Batter:
  • ½ cup rice flour (½ cup = 80 g)
  • 1 large egg
  • subheading: For Tempura Dipping Sauce:
  • ¾ cup dashi (¾ cup = 200 ml) (I use awase dashi. Kombu dashi for vegetarian)
  • 3 Tbsp gluten free soy sauce
  • 3 Tbsp mirin (make sure it’s Hon-mirin, not Aji-mirin, See Note)
