Simple Vegan Ricotta Cheese
Ingredients
  • 2 Tbsp raw cashews or white beans, (optional)
  • 1 clove garlic
  • 2 Tbsp almond milk, or other plant milk
  • 1-½ Tbsp lemon juice
  • 12 oz firm tofu, drained
  • ¼ cup nutritional yeast flakes
  • 1 Tbsp Italian dry seasoning
  • 2 Tbsp basil (and or one fresh basil leaf)
  • 10 oz frozen, chopped spinach, thawed, (optional)
  • salt & pepper
