Easy Healthy Black Bean Soup
Ingredients
  • 1 tbsp extra virgin olive oil
  • 1 medium Red Onion chopped
  • 1 pound black beans rinsed and washed or 2 16 oz cans, liquid drained
  • 1 large red bell pepper or I use 1 cup tri color peppers
  • 4 cloves of garlic minced
  • 1 can tomato puree 10 oz
  • 4 cups of low sodium vegetable broth
  • subheading: For Seasoning:
  • 1 tbsp Cumin powder
  • 1 tsp All Purpose seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
