Birria Tacos in Creamy Adobo Sauce
Ingredients

  • 4 garlic cloves

  • 2 tsp thyme
  • 2 tsp whole oregano
  • 1 tsp ground ginger or fresh ginger
  • ½ tsp ground cumin
  • ½ tsp ground allspice
  • ½ tsp paprika
  • subheading: Meat and Dipping Sauce (Consommé):
  • 1 T olive oil
  • 3½ # beef (chuck roast, sirloin, ribeye, etc.) chopped in chucks
  • ½ C diced onion
  • 1 bouillon cube
  • 32 oz. beef broth
  • 2 C water
  • subheading: For Serving:
  • 18 corn tortillas
  • Chopped white onion
  • Chopped cilantro
  • Shredded Oaxaca or Monterey Jack cheese
