  • 8 midloin lamb chops, trimmed
  • 250g halloumi, cut into 1cm thick slices
  • ¼ cup mint leaves, torn
  • 2 tbs lemon juice
  • 1 tbs baby capers
  • 1 kg seedless watermelon, rind removed and cut into 3cm cubes
  • 1 small red onion, finely chopped
  • salt for seasoning
  • pepper for seasoning
