Sweet Potato Soup with Ginger and Kale
Ingredients
  • 1 large onion, chopped
  • 1 tablespoon minced peeled fresh ginger
  • 2 pounds sweet potatoes, peeled and chopped (about 4 large or 6 medium potatoes)
  • 5 cups low sodium or no-salt-added vegetable broth
  • 1 ½ cups cooked cannellini beans or 1 (15 ounce) can low sodium or no-salt-added cannellini beans
  • ¼ teaspoon black pepper
  • 6 cups baby kale or spinach
  • ¼ cup raw pumpkin seeds, toasted
